The paleta story starts in Tocumbo, Michoacán in the 1940s, where the Alcázar cousins turned a neighborhood tradition into Las Michoacanas — a paletería franchise that spread across Mexico and eventually to cities across the U.S. Chicago's Paletería Los Magos in Pilsen helped shape this edition.
